洋蔥能殺菌解腥,可提振食慾、幫助消化,預防血管硬化和骨質疏鬆,在歐洲有「蔬菜皇后」之稱。洋蔥所含的「蒜胺酸酶」,有強烈的揮發性氣味,刺激眼睛和鼻子,讓人切洋蔥時眼淚汪汪,但是只要一加熱,味道卻一百八十度大轉變,由透明變成焦糖色,辣味消失,滲出甘甜的湯汁,真是神奇的食材,吃法多變,肥丁用免炸的方式製作洋蔥圈,一樣香脆可口,大人小孩都愛吃。

豆腐最突出的營養是高鈣低脂,多吃也不發胖。對素食者來說,是非常好的蛋白質來源。不過溫暖潮濕的天氣很容易讓豆腐發酵,新鮮買回來的豆腐,就算放在冰箱,一過夜就變壞。豆腐又不適合冷凍保存,因為豆腐裡面有很多極細小的孔洞藏著水份,大小和分佈是不規則的,有些孔洞更是相連,當豆腐冷到0℃以下時,豆腐裡的水結成冰體積變大,孔洞就會受到擠壓成網絡形狀。冰溶化時,被壓縮的豆腐不能復原,因此冰豆腐就有了許多小孔,口感變差。
