Stir-fried Eggplant with Miso

Ingredients

  • 200 g  Minced Pork
  • 2 Eggplant
  • 2 ~ 3 tbsp Diced Spring Onion
  • 2 ~ 3 Sliced Ginger
  • 1/2 Garlic Clove
  • 2 tbsp Homemade Japanese Miso
  • 2 tbsp Water
  • 2 tsp Caster Sugar
  • 1 tbsp Rice Wine

  • 1 tbsp Fish Sauce
  • 1 tsp Caster Sugar
  • 1 tsp Cornstarch
  • Pinch of White Pepper

做法

1. 豬肉加入醃料:生抽、魚露、砂糖、生粉、白胡椒粉醃半小時或以上

2. 蒜頭拍扁去殼,葱切粒,薑切片,茄子切成條狀 ,切薄一點較易炒熟 (切好的矮瓜泡於水中,以防變黑)。在小碗中放入清水,加入味噌、砂糖及白胡椒粉,將固體狀的味噌攪拌成流質備用

★★★ 茄子最好不要削皮,茄子皮含有大量的營養和有益的物質

3. 開鑊許少許油,加入蒜頭、薑片爆香,放入豬肉炒,盡量炒碎成為肉鬆,讚酒

★★★ 如想容易在鑊中弄碎,肥丁會先加一湯匙清水到肉料中攪拌,再落鑊

4. 當豬肉炒至八成熟時,加入茄子,加入味噌拌炒均勻入味,肥丁用油少,會再加點清水,仍後收細火加蓋焗數份量

5. 起蓋,收乾汁,灑上葱粒兜鑊即可上菜

小叮嚀

  • 熟透的茄子的顏色拍照實在不好看,照片中的茄子未完全熟透,肥丁拍完照片後再炒多一會
