Mung Bean Fillings ( Oil Free )

Ingredients 

  • 200 g Split Mung Beans  ( Yellow Mung Beans )
  • 500 ml Water
  • 2 Stalk of Rue
  • 80 g Rock Sugar
  • 1 tbsp Maltose
  • Pinch of Sea Salt
  • 5 g Wheat Starch

1. 開邊綠豆泡水過夜

2. 將泡過液的水倒去,綠豆放入鍋中,加入 500 ml 的清水,煮至沸騰後轉為小火,清除浮在表面的泡沫雜質,加入碎冰糖,慢火熬煮 20 分鐘後,放入兩整條臭草,繼續慢火熬煮 10 分鐘,當湯汁收乾,這時候一定要顧爐,否則很易焦底,用木勺攪拌時見到底部,即可離火,加入麥芽糖及海鹽,拌勻

3. 將煮軟的綠豆打成綠豆泥,篩入澄麵,拌均,即可

  • 綠豆的品種和新鮮度影響熬煮的時間,烹煮過程中要不時取出確認煮熟的程度
  • 若你不介意加油,可酌量添加葡萄籽或菜油,增加幼滑及柔軟度
