Lowcarb and vege Jasmine Tea Konjac Jelly

Can a healthy lifestyle and delicious food go hand in hand?

It’s 2023, and don’t think that weight loss means only eating bland and tasteless food. You can enjoy sweet treats while still maintaining a healthy lifestyle, giving you more energy and motivation.

When I discovered a sweetener called monk fruit sugar, with a low glycemic index and low calorie content, it was perfect for those following a low-carb or vegan lifestyle. I made konjac jelly with jasmine tea, which is not bland at all. It has a delightful chewy texture and can be enjoyed with sparkling water for a refreshing and elegant experience.

◤材料

  • Jasmine Flower Blosom 5 g
  • Boiling water1000 ml for brewing jasmine tea
  • Room temperature water 250 ml for dissolving konjac powder)
  • Konjac powder15 g
  • White monk fruit sweetener  35 g
  • Strawberries 
  • Kiwi 
  • Mango 

Instructions


Dice the strawberries, kiwi, and mango into small pieces. Do not cut them too large, or they may break when peeled.


Brew the jasmine tea leaves with boiling water for 2 minutes, then pour out and set aside. Do not brew for too long, or it will have a bitter taste.


Mix the konjac powder with white monk fruit sweetener and stir until well combined.


Pour the room temperature water into a pot, add the konjac powder and monk fruit sweetener mixture, and stir until dissolved. Then heat the mixture to prevent clumping. After it is completely dissolved, add 500 ml of jasmine tea.


Place the diced fruit into round molds, pour in the slightly cooled konjac mixture, cover, and gently press down until the liquid comes out.


Chill in the refrigerator for 1 hour until it solidifies into a bouncy ball shape.


Use a soda maker to make soda water.


Add ice cubes, konjac jelly, soda water, and jasmine tea to a glass and enjoy
