北風起了,在冷颼颼的天氣,以熱水沖泡柚子蜜,捧在手裏,暖在心頭。中秋時親友送娘家很多柚子,順手拿一個回家,一半新鮮吃,一用製成柚子蜜沖茶,生津止喝,止咳化痰、潤肺清腸。柚子蜜還可以做甜品,如戚風蛋糕、馬卡龍,代替砂糖入菜調製醬汁,烹調肉類或海鮮,特別解膩。

柚子維他命C豐富,潤肺清腸,可解酒毒。果肉性寒,不能吃太多。柚子全身是寶,別以為柚皮是垃圾棄掉啊。從柚皮削下來的白瓤 ( 不帶綠/黃皮 ),切成條狀晒乾燃點,天然又清香,可代替化學蚊香驅蚊。白瓤放進雪櫃,可吸除雪櫃的異味,是天然的除臭劑。柚皮 ( 有顏色的部份 ) 含有精油,用熱水浸泡可洗臉和泡熱水澡,消除疲勞又美肌。

材料
- 柚子皮 40 g ( 已去白瓤 )
- 柚子肉 400 g
- 碎冰糖 120 g
- 蜂蜜 75 g
- 麥芽糖 2 大匙 ( 可用砂糖代替 )
★★★ 槐花蜜,或味道較清的蜂蜜,不會搶走柚子的香味
做法:
1. 玻璃瓶放在沸水中煮 5 – 10 分鐘,放入焗爐以 100 C烘乾消毒,用風筒風乾亦可

2. 在流水中用刷子輕輕洗淨柚皮,切去柚蒂,用刀子沿著柚子的弧度輕輕劃 4 至 5 刀,將柚皮剝下

3. 將柚皮的白瓤部份削去,白瓤帶苦味,盡量切除乾淨,果皮切細,以熱水浸泡,放入雪櫃過夜,期間換水兩至三次

4. 柚子肉剝掉白筋,去核,拆開果肉,盡量拆細一點,一層果肉一層碎冰糖放入碗中,蓋保鮮紙放入雪櫃冷藏一晚

5 將浸泡的柚子皮的水倒去,柚皮絲及 100 ml 新鮮清水倒入小鍋中,加熱到沸騰,改為小火熬煮約 10 分鐘直至柚皮變軟,加入 2 湯匙 麥芽糖,繼續煮 10 分鐘至果皮變透明及水乾,試試是否還有苦澀味

6. 鍋中留下柚子皮,加入柚子肉碎冰糖,中火煮至出水,轉小火煮約 15 分鐘,期間不時攪拌,果肉變軟爛時撈出 1/3 備用

7. 當果汁減少 1/2 ,將果肉倒回鍋內,繼續攪拌至濃稠,離火,趁熱入瓶,稍為放涼後才倒入蜂蜜攪拌均勻,倒轉冷卻,過一兩天後便享用,保質期 2 ~ 3 個月

The north wind has risen, and in the chilly weather, brewing pomelo honey with hot water warms not only my hands but also my heart. During the Mid-Autumn Festival, friends and relatives send many pomelos to my family home. I casually take one home, enjoying half fresh and using the other half to make pomelo honey for tea, which helps relieve thirst, soothe coughs, transform phlegm, and moisten the lungs while cleansing the intestines. Pomelo honey can also be used in desserts such as chiffon cakes and macarons, replacing sugar in savory dishes for sauces or in cooking meats and seafood, making it quite versatile.

Pomelo is rich in vitamin C, beneficial for the lungs and intestines, and can help detoxify alcohol. The flesh is cold in nature, so it should not be eaten in excess. Every part of the pomelo is valuable; don’t think of the peel as useless waste. The white pith removed from the peel (without the green/yellow skin), when cut into strips and dried, can be burned and used as a natural, fragrant mosquito repellent instead of chemical ones. The white pith can be placed in the refrigerator to absorb odors, acting as a natural deodorizer. The colored part of the pomelo peel contains essential oils and can be soaked in hot water for facial cleansing and bathing, helping to relieve fatigue and promote beautiful skin.

◤Ingredients
- Pomelo (Yuzu) peel 40 g (white pith removed)
- Yuzu flesh 400 g
- Raw Rock sugar 120 g
- Honey 75 g
- Maltose 2 tbsp ( can be substituted with sugar )
◤Instructions
❶ Place the glass bottle in boiling water and cook for 5 to 10 minutes, then dry and disinfect it in the oven at 100°C; alternatively, you can use a hairdryer to dry it.

❷ Gently wash the pomelo peel with a brush in running water, cut off the stem, and lightly make 4 to 5 cuts along the curve of the pomelo with a knife to peel off the pomelo skin.

❸ Peel off the white pith of the pomelo, as it has a bitter taste, making sure to remove it thoroughly; slice the peel into thin pieces, soak in hot water, and place it in the refrigerator overnight, changing the water two to three times during this period.

❹ Peel the white pith off the yuzu, remove the seeds, and tear the pulp into smaller pieces as much as possible. Layer the pulp with crushed rock sugar in a bowl, cover with plastic wrap, and refrigerate overnight.

❺ Pour out the soaked pomelo peel water, add the pomelo peel strips and 100 ml of fresh water into a small pot, bring to a boil, then lower to a simmer and cook for about 10 minutes until the pomelo peel becomes soft. Add 2 tablespoons of maltose and continue to cook for another 10 minutes until the fruit peel turns transparent and the water evaporates. Taste to see if there is still a bitter flavor.

❻ Add the yuzu peel to the pot, then add the yuzu pulp and crushed rock sugar. Cook over medium heat until it releases water, then reduce to low heat and simmer for about 15 minutes, stirring occasionally. When the fruit pulp becomes soft and mushy, remove 1/3 for later use.

❼ When the juice is reduced by half, pour the pulp back into the pot, continue stirring until thickened, remove from heat, pour into bottles while hot, allow to cool slightly before mixing in honey, invert to cool, and enjoy after a day or two; the shelf life is 2 to 3 months.
◤Tips
- Some areas produce pomelo with a high content of bitter-tasting terpenes, and these terpenes have low solubility in water. Currently, there are basically no solutions to this issue, and in such cases, other varieties of pomelo peels can only be used to enhance the aroma.
- Sweet osmanthus honey, or honey with a milder flavor, will not overpower the fragrance of the grapefruit.
