Stir-fry Minced Pork with Soybean Sprouts Recipe

材料

  • 豬絞肉 Minced Pork  200 g ( 肥丁這次用黑毛豬肌里肉 )
  • 黃豆芽 Soybean Sprouts  300 g
  • 法邊豆 French Beans  100 g
  • 甜菜脯 Preserved Turnip  50 g
  • 松子 Pine Nuts  35 g

豬絞肉 ⧫ 醃料

  • 古法釀造醬油 Light Soy Sauce  1 小匙
  • 原蔗糖 Demerara Raw Cane Sugar  1 小匙
  • 魚露 Fish Sauce 1 小匙
  • 現磨白胡椒粉 Freshly Ground White Pepper  適量

調味料

  • 米酒 Chinese Rice Wine  1 大匙
  • 鎮江黑醋 Zhenjiang Vinegar  2 小匙
  • 原蔗糖 Demerara Raw Cane Sugar  2 小匙
  • 白胡椒粉  Freshly Ground White Pepper  適量
  1. 豬肉切丁,加入醃料,用調理機打成豬絞肉,加入 1 大匙水,攪拌均勻,放進冰箱醃 15 ~ 20 分鐘
  2. 黃豆芽去根,切末。法邊豆去頭尾,切幼丁。甜菜脯切末
  3. 平底鍋加入少許油,中火加熱至看見油紋,加入豬絞肉,加入米酒,用木鏟推開絞肉成肉末,不要著急撥弄,讓肉末表面稍微煎香,才翻面,均勻煎至金黃,再炒一會,熄火,盛起
  4. 鍋子不用清洗,加入法邊豆和 1 大匙水,翻炒一下,加入甜菜脯快炒一下,加入松子,加入 2 小匙原蔗糖和 2 小匙黑醋,翻炒均勻
  5. 肉末回鍋,翻炒一下,最後加入黃豆芽,黃豆芽容易出水,快速翻炒一下,試味,填釀在空心的芝麻燒餅裡,即可享用

Instructions

1. Minced pork, soy sauce, fish sauce, sugar and ground white pepper mixture in a blender and marinate in refrigerator (15-20 minutes).

2. Minced soybean sprouts, French beans and preserved turnip.

3. Heat a wok over medium heat. Add oil and when it begins to shimmer, dump in the ground pork, add wine and let cook, undisturbed for a few minutes until it is slightly brown on the bottom. Flip and repeat on the other side. When both sides are brown, Remove from pan and set aside.

4. Add the french beans and preserved turnip and sauté for about 1 minutes. Add pine nuts and cook for about 1 minutes more. Add Demerara raw cane sugar and vinegar.

5. Mix in the meat and soybean sprouts. Taste, adjust seasoning as desired. Serve immediately spooned into warm sesame seed pocket bread.
