One Pot Wonder Thai Style Peanut Pasta

材料 ( 份量:2 ~ 4 人 )

  • 義大利寬條麵 Linguine 300 g
  • 蔬菜高湯 Homemade Vegetable Stock 1000 ml(自製蔬菜粉 6 小匙 +1000 ml 清水,自製蔬菜粉點這裏 )
  • 紅色甜椒 Red Bell Pepper 1 個
  • 黃色甜椒 Yellow Bell Pepper 1 個
  • 紅蘿蔔 Carrot 1 根
  • 洋蔥 Onion 半個 (不吃洋蔥可用綠豆芽代替)

香料

  • 風乾羅望子 Tamarind 1 大匙( 可用酸梅代替 )
  • 香茅 Lemongrass 1 根
  • 鮮採羅勒 Fresh Basil 1 株
  • 花生醬 Peanut Butter 2 大匙 (可用其他堅果醬 Nut Butter 代替,鮮磨花生醬做法點這裏)

調味料

  • 棕櫚糖 Palm Sugar 10 g (可用二砂糖代替)
  • 魚露 Fish Sauce 1 小匙 ( 可用醬油代替 )
  • 青檸汁 Lemon Juice 適量
  • 鮮磨黑胡椒粉 Fresh Grated Black Pepper 適量
  1. 紅蘿蔔去皮切火柴差不多長的幼段 (切得好醜啊)。甜椒去蒂部,拿著蒂部連籽一起拔出來,蒂較多農藥積聚,棄掉。餘下的部份切火柴差不多長的幼段
  2. 洋蔥切段。香茅從中間剖開,不用切碎,煮出味道後較容易取出
  3. 清水加入自製蔬菜粉,溶化拌勻,備用
  4. 在鐵鑄鍋中,先把蔬菜排好。要是喜歡香一點,可以先把蔬菜加少許油炒香,然後才把意大利麵鋪在上面 ( 肥丁太餓連炒也省了 ),意大利麵不要接觸鍋底,否則加熱時容易黏底,要是麵條太長,折斷才放入,意大利麵平鋪加熱時傳熱才均勻,這道菜講求一氣呵成,如湯汁變乾時發現麵條未熟,再加水煮多一會,其他材料便會過熟不好吃了
  5. 放入所有香料及棕櫚糖,其他調味料煮好後才加入。加入蔬菜高湯,加蓋,大火煮至沸騰,打開鍋蓋,調至小火繼續烹煮 10 分鐘,撈起浮面的泡沫雜質,每 2 分鐘攪拌一下,檢查意大利麵有沒有黏鍋底,否則很易煮焦,湯汁慢慢被意大利麵吸收,直至意大利麵煮熟,加入魚露調味,要不要完全煮乾湯汁可自己斟酌,離火
  6. 上碟時拿走香茅,可隨口味加點岩鹽、黑胡椒粉和青檸汁

One-pot pasta is a bit of a mysterious wonder. This quick, veggie, creamy Thai Style Linguine one pot pasta recipe without any diary products.

Ingredients ( Serve 2 ~ 4 )

Spice 

  • 1 tbsp Tamarind
  • 1 stalk of Lemongrass
  • 1 stalk of Fresh Basil
  • 2 tbsp Peanut Butter ( Can replace by Other Nut Butter )

Seasonings 

  • 10 g Palm Sugar
  • 1 tsp Fish Sauce
  • Lemon Juice
  • Pinch of Fresh Grated Black Pepper

Preparation

1. Peel the carrots and cut the carrot into a few big pieces before julienne (Matchstick) cuts.  Slice off the top of the pepper, use your fingers to pull out the seeds and innards. Slice the pepper in half and then slice off thin strips lengthwise.

2. Slice onion thinly. Cut off the tough upper stem of the lemongrass stalk, then bisect the remaining section. Find the tender inner flesh, cut into half.

3. Mix vegetables stock powder and water, stir to dissolve, set aside.

4. Place all the vegetables In a large cast iron pot. You may add some oil to stir-fried a bit before cooking. Place linguine onto the top of vegetables so that it will not stick to the bottom of the pot easily. Break linguine to fit the size of the pot if necessary.

5. Add all the spice, palm sugar and vegetables stock. Cover pot with lid and bring to a boil. Reduce to a low simmer and remove the lid, cook for about 10 minutes. Stirring every 2 minutes to make sure the linguine and other ingredients won’t stick to the bottom of the pot. Cook until pasta is dente and almost all liquid has absorbed by the linguine, you may left some liquid as desired. Add fish sauce when it is nearly done.

6. Remove lemongrass and stir in lime juice if you like. Season to taste with salt and pepper.
