Do you love Caesar Salad ? I do, it is my favourite salad all over the time. Do a little research into the background of the caesar salad and you’ll find that it is named not for some illustrious Roman emperor, but for Caesar Cardini, a Mexican chef working in Tijuana in the 1920s, who would dramatically serve it up table-side. In this century, it is probably the most popular western restaurant salad in the world, with plenty of variations around the theme of romaine lettuce, garlic, Parmesan, and croutons.
Caesar Dressing Ingredients ( Serve 3 ~ 4 )
- 150 ml Extra Virgin Olive Oil
- 30 ml ( 2 tbsp ) Water
- 2 tbsp Lemon Juice
- 1 tbsp White Wine Vinegar
- 1/2 tsp Sea Salt
- 1/2 tsp Worcestershire Sauce
- 1/2 tsp Dijon Mustard
- 1/4 tsp Ground Black Pepper
- 1 Egg Yolk( can replace with yogurt )
- 1/2 tsp Minced Garlic
- 10 g Grated Parmesan Cheese

- 2 Romaine Lettuce
- Homemade Croutons
- Thin Slice of Parmesan Cheese
Caesar Dressing • Preparation
Add all ingredients to a blender jar in order listed and blend until creamy and smooth
Caesar Salad • Preparation
1. Put Romaine Lettuce into refrigerator before serve. Rinse with boiled water in room temperature with ice. Drained. Using your hands, tear off chunks of lettuce from the heads of lettuce into pieces (do not use a knife to cut).
2. Cut bread into cubes, baked 120ºC oven for 10 minutes, checked until most of the cubes are hard and crunchy. Watch closely for burning.
3. Parmesan can be thin slices or shredded
4. Use your hands to gently toss the lettuce, croutons, and dressing, then top off with the shaved Parmesan

- The Dressing is think because I use less olive oil. Add more olive oil if you want more creamy dressing
- Butter Lettuce also taste good
