Homemade Thousand Island Dressing

Ingredients ( Makes 400 ml ) 

  • 600 g Oven Dried Cherry Tomatoes
  • 60 g Carrots
  • 100 g Onion
  • 50 g  Banana
  • 2 tbsp Extra Virgin Olive Oil
  • 3 tbsp White Wine Vinegar
  • 2 ~ 3 tsp Demerara Raw Cane Sugar
  • 1/4 tsp Himalaya Salt
  • Ground White Pepper

1. 紅蘿蔔去皮,切丁。洋蔥去皮,切丁。平底鍋裏放少許油 ( 要用能高溫煮的油,初榨橄欖油不行唷 ) ,放入洋蔥炒香,去除辛辣味,小火炒 3 ~ 4 分鐘後,加入紅蘿蔔再炒 3 ~ 4 分鐘。洋蔥不用炒至焦糖色,離火,放涼

2. 烘車厘茄去皮,香蕉去皮切丁。把車厘茄、洋蔥、紅蘿蔔、香蕉、油、醋、糖、鹽及胡椒粉放進攪拌機中,打成橙紅色的忌廉狀醬汁,即成。為免過酸或過甜,醋和糖可逐少加入,試味調整到適合自己的口味

3. 吃不完的千島醬可放進消毒過的玻璃瓶,雪櫃保存 2 ~ 3 天

小叮嚀

★ 如不喜歡醋酸度太濃,可用 1 湯匙檸檬汁代替 1 湯匙白酒醋 ★ 沙拉醬一般選用白酒醋來調製,原因是白酒醋的醋味較淡,甜度較低,味道溫和不刺激
