椰子和蔥,風馬牛不相及,搭配起來卻出乎意料的美味。這麼好的「煮」意當然不是肥丁想出來的,可說是肥丁娘家的家常醬,越南餐廳也沒有供應的唷。透著蔥香的濃濃椰漿,忌廉般軟滑的質感但不覺甜膩,塗在溫熱皮脆的法包上,咬一口便停不了,製作方法十分簡單,椰漿熱量頗高,肥丁不常做,最近煮了一鍋越南清補涼糖水,還有半罐椰漿,做成抹醬份量剛剛好,兩個小法包便這樣消滅掉了 ~ 蔥香椰子醬【芳香軟滑】Spring Onion Coconut Paste
最近有全職媽媽告訴我,很想親手做麵包給兒女吃,一般的麵包需要 3 – 4 小時才能完成,下班回家已經很晚了,如果沒有麵包機,有沒有別的辦法。於是肥丁想到了免揉麵包,混合好材料在雪櫃裏過夜,第二天放工時拿出來作二次發酵和焗烤,只需 1 小時 15 分鐘,一頓晚餐的時候,麵包就做好了。 藍莓開心果夾心麵包【免揉麵包】Overnight Blueberry Loaf
不用問,酸酸甜甜的藍莓也是肥丁的「飛弗」,每逢超巿減價的時候便大量入貨,新鮮藍莓保質期短,被標籤減價的本來已放了一段時間,買回家吃不完最好便是製成果醬了,還可以應用於麵包和甜點,別以為藍莓售價貴而需要特別的處理,其實藍莓的果膠很豐富,只要有糖和檸檬汁,已經能夠輕易煮成果醬,新算新手也能立即掌握。肥丁想照片拍出來有亮晶晶的效果,所以才加入了自制的青蘋果果膠,沒有的話是完全沒有問題的。 藍莓果醬【保健水果】Blueberry Jam
